Just a handful of healthy soil can have billions of micro-organisms living within it. This microscopic life determines the health of the soil.  For soil, the food source is organic matter.  In a forest setting, the natural cycle of fallen leaves provides organic matter to the soil to feed the microbes and keep the system in balance.

To be organic, a product need only have a carbon molecule. Since most synthetic fertilizers contain a carbon molecule, it can be misleading when your gardener tells you he is putting down "organic fertilizer".  We need to be more clear than that. Another buzzword has been natural. This is a big step closer to the truth. This generally refers to natural  by-products of nature from either man-made efforts, i.e. fish meal from the fishing industry or natural by products of a natural process, such as cow manure.  Keep in mind that all things natural do not always mean it is good for your lawn or shrubs.  You and your neighbors would NOT want cow manure or raw extract of rotted salmon to be applied to your lawn, no matter what.  The odor would stretch for blocks and last days !
